What is there to document for entry level homelabbing? (VMs, Adguard server, MDM management)

I'm trying to get into tier 1 help desk, and of course the job market is terrible right now, so I can't get experience in a job that wants experience. Thus, I am getting into homelabs to learn some basic things. I'm learning Active Directory on a small network of virtual machines, I learned a little about Linux and DNS by setting up an AdGuard-Tailscale network on a Chromebook, and I'm toying around with a MDM to learn about mobile device management.

Is there even anything to document besides just…screenshots of me doing my work? I hear of people posting their network diagrams or IaC on Github projects, but that's higher level networking stuff and I'm just trying to get into the "reset passwords" job right now to work my way up to sys admin. So far I just post screenshots with progress updates on my LinkedIn because I don't know what I would put on a Github project.
