This is an update to this question, which I posted three days ago.
I am NOT trying to scare-monger here. I ate the sausages last night and, as expected, I didn't get a reaction. There is no reason to assume that these sausages contain gluten. There never was.
I am also not saying that GFFP isn't trustworthy. Quite the opposite! I appreciate that I got a response at all, since the form I used was very clearly geared towards corporations who are considering using their service, and I'm just some lady. What I've gathered from the email is that there was just a lapse in a communication between GFFP and Black Bear's parent company, and hopefully any future emails I get from them prove that to be true.
I've been an internet user for a significant majority of my life. I know how frustrating it is to stumble across a forum thread that's asking the exact question you need an answer to, and not see it answered. So, I'm answering the question. Hopefully this helps anyone who was just looking for food recommendations too. As I said, they were perfectly serviceable chicken sausages
